These corn dog muffins are delicious and simple to make when you have a party and kids in the house. I love a fried corn dog on a stick which is one my favorite childhood snacks. Ingredients
1 cup yellow cornmeal
1 cup all-purpose flour
1/2 teaspoon baking soda
1/2 teaspoon baking powder
1/2 cup buttermilk
1/2 cup whole milk
1/2 teaspoon salt
2 tablespoons sugar
3 tablespoons butter, melted
2 eggs
1/4 cup vegetable oil
1 teaspoon vanilla extract
6 beef, turkey, or pork hot dogs, cut into bite size pieces

Instructions
Preheat oven to 400 degrees
- Combine corn meal, flour, baking soda, baking powder, and salt in a mixing bowl.
- In a separate bowl, combine buttermilk, milk, melted butter, vegetable oil, and eggs.
- Pour mixture over the dry ingredients, stirring constantly.
- Grease muffin tins and fill them more than half full with batter. I used a regular size muffin pan or you can make mini muffins as well. Add a few slices of hot dog.
- Bake until cornbread is done about 12-14 minutes or until golden brown. Remove from the oven and cool on a wire rack. Serve with ketchup and mustard. Enjoy ka.
