From Farm to Table

 

We have joined the Anchor Run CSA community for second year already. I was a city girl and have been living in the suburb of Philadelphia for years. It was fun and totally different life style. In the city we always have ready-to-eat foods available 24/7 so we don’t need to cook. On the other hand, in the suburb area I feel like I am getting closer to the nature I can see deer running , beautiful carnival birds flying, and gardening in our own backyard. I enjoy it every day and our friend introduced us to the organic farm.

As a member of the farm, I will be able to enjoy seasonal fresh fruits and vegetables each week and make my healthy meals at home. After we came back from vacation last month we gain a few pounds because of consuming indulgent foods and drinks. This summer my goals are to make healthy menus, including low-fat, low calorie recipes, and keeping us back on track again.

Last Sunday I roasted chicken and transformed into pulled chicken sandwiches. Today I also used roasted chicken to make chicken noodle soup with baby kale and kohlrabi. It was delicious lunch. These fresh strawberries are also very tasty and good with vegetable salad and served with roasted pork tenderloin. It was scrumptious!

What is a CSA

        CSA stands for Community Supported Agriculture. Usually you can find a wide variety of fresh vegetables and fruits cultivated by CSA that has the best health benefits. As a member you get fresh organic vegetables all season long. I became a member of the Anchor Run Farm in Wrightstown, PA this year. It was one of my favorite activities last summer and fall. I fully enjoyed picking my own vegetables and helping on the farm. The farmers and members of the Anchor Run were very nice and friendly. 

       There were quite a few activities on the farm such as helping farmers to pick vegetables, fruits, harvesting garlic, winter squash, and weeding farm fields. It was fun activities getting involved in the community, though it can be really tiresome when working under the sun for a few hours. I also enjoyed cooking with various of types vegetables I was familiar with or never used before. I especially liked the freshly picked garlic. Yum!
