Stuffed Chicken Thighs with Spinach and Parmesan Cheese

Stuffed Chicken thighs are delicious, simple, and healthy that is perfect for weeknights or special occasions.

Ingredients

2.5 pounds chicken thighs, boneless and skinless

1 onion, chopped

3 garlic cloves, chopped

1 carrot, chopped

2 handfuls of spinach

1 potato, cooked in a microwave until tender, cut int cubed

2 teaspoons capers

2 tablespoons olive oil

1 tablespoon butter (optional)

salt and pepper

grated parmesan cheese

1/2 teaspoon dried oregano

1/2 teaspoon garlic power

2 scallions, sliced (optional)

a handful of cilantro stems , chopped

4 garlic cloves

1 tablespoon oyster sauce

Directions

  • Marinate chicken thighs, pound cilantro stems, 4 garlic cloves, 1/2 tsp ground pepper into a smooth paste. Transfer chicken thighs in a gallon plastic bag. Add cilantro paste, seasoning sauce, and oyster sauce into a bag. Massage the marinade into the chicken until combined. Marinate at least 3 hours or overnight in a refrigerator.
  • Preheat oven to 400 F degrees.
  • Filling: add olive oil into a skillet and heat over the medium heat. Add onion and sauté until translucent. Add chopped garlic, carrot, potato, butter and cook until tender. Add spinach and cover with lid until wilted. Sprinkle some salt, pepper, garlic power, oregano, and capers Taste and adjust seasoning. Set aside.
  • Roll: place about 2-3 Tablespoons of filling and sprinkle grated parmesan cheese on each thigh evenly. Roll the thighs and place them in a baking dish. You can use cooking spray or olive oil to coat the dish. Sprinkle some salt and pepper over the stuffed chicken.
  • Cover the dish with foil or lid. Bake the stuffed chicken for 30 minutes. Remove foil and sprinkle parmesan cheese over the chicken. Bake for 5-10 minutes until cheese has melted. You can use the thermometer inserted into the thickest part for 165 F degrees.
  • Sprinkle sliced scallion. Serve immediately alongside salad or mashed potatoes if desired.
